Recipe
Yield: 1 full wrap (2 halves)
Time: 5 minutes
Diet: Vegan
1 burrito sized whole wheat tortilla
4 tbsp of hummus
1/4 an avocado
1/3 cup of spinach (packed)
8 slices of cucumber
1/2 of a small tomato
Cooking Tools:
Butter/spreading knife
Knife
Cutting board
Plate for serving and eating on
Instructions:
First, lay your tortilla down on a clean surface. Then, with your butter/spreading knife, spread the hummus all around the tortilla.
On a cutting board, slice your avocado into four slices, cut your cucumber into slices, and cut your tomato into cubes.
Once you have done so, lay down your avocado, and then spinach and press down firmly. Then, place your cucumber slices and tomato cubes on top.
When folding your wrap into a burrito shape, you’re going to want to first roll and tuck in the insides, once. Then fold in both sides and finally roll the rest until it is in a burrito shape.
How to eat it:
You can either eat this whole or cut it in half and eat it by halves.
I hope you guys enjoy this delicious summer lunch idea!
Notes:
1. You can cut your cucumber into thin or thick slices, but it's totally up to your preference.
2. I decided to lay my tortilla on my serving plate.
