 Banana, Coconut, Pistachio Pound Cake 

Hello, welcome back or to my food blog! My name is Jolly and today I will be introducing to you my Banana, Coconut, Pistachio Pound Cake. Not only is this delicious, but it is healthy too. So, follow along with me as I show you how to make my Banana, Coconut, Pistachio Pound Cake!

Recipe

Yield: 4 servings (4 slices) 
Time: 55 minutes  
Diet: Vegan 

Ingredients:
3/4 cup of flour
1 tsp of baking soda
1 overly ripe banana 
2 tbsp of coconut oil
4 tbsp of almond milk 
1/4 cup of coconut sugar 
1 tbsp coconut yogurt 
1/4 cup of chopped pistachio's plus another 2 tbsp of chopped pistachio's to sprinkle on top 
Baking Spray

Baking Tools:
Large bowl
Fork
1/4 cup
1 tbsp
1 tsp 
Spatula 
3 x 5 1/2 inch loaf pan
Butter Knife 

Instructions:
First, set your oven to 350° and grease your loaf pan with baking spray, making sure you distribute the grease evenly.

Next, peal your banana and mash it with a fork. Then add in your coconut oil, almond milk, coconut sugar, and coconut yogurt. Mix all the ingredients until they are well combined.   

Now, add in the dry ingredients, including the flour and baking soda. Mix until well combined. Fold in the pistachios with your spatula. 

Then, put the batter into the baking tin and use the spatula to spread it evenly before sprinkling the remainder of pistachios. Place the loaf pan to bake in the oven for 35 minutes, before taking it out of the oven to set for 10 minutes. 

After it has rested for 10 minutes take it out of the loaf pan using a butter knife, and you are ready to serve.

Notes:
1. Make sure your banana is almost completely brown before using it in this recipe. 

2. DO NOT skip the step to wait 10 minutes before removing the loaf from the pan with a butter knife.
